So you’ve made an amazing cake and now you want to pair it with the best buttercream. I’ve got you! This icing is super smooth and isn’t as sweet as your usual icing.
My best advice is to invest in Philadelphia cream cheese as it’s texture is far better than any own brand I’ve tried. Also, have patience. The cake is the easy bit, buttercream can take a bit of practise!

Best Ever Buttercream Recipe
Ingredients
110g softened unsalted butter
220g icing sugar
Flavouring e.g. 2 tbsp lemon curd
110g full fat cream cheese, straight from fridge (drain away any liquid)
Equipment
Electric whisk or stand mixer
Silicone Spatula
Method
- Start by beating the butter on medium for 5 minutes using a hand whisk or stand mixer.
- Add half your icing sugar into the bowl, combine and then add the second half.
- Once the icing sugar is combined into the butter, beat for 5 minutes, scraping down the sides of the bowl halfway through. The mix should now be pale and fluffy.
- If you’re using a stand mixer, switch to the balloon whisk attachment.
- Scrape down the sides of the bowl with your spatula and while the mixer is on medium speed, add in the cold cream cheese 1tbsp at a time. The mix should start to look smooth and thick. Once all the cream cheese has been added, add your flavouring and turn the mixer up to high for 10 seconds.
- Now you should have smooth and creamy buttercream that has the texture of a Mr Whippy! You can dollop this straight onto your sponges or if you’re a real perfectionist, scoop into a piping bag and pipe onto your cake.
