Lemon Buttermilk Hacks

The best part of Lazycakes Cake Mix is that it's so adaptable! The Lemon Buttermilk cake can be made with a few alternative ingredients so whether you ran out of buttermilk or forgot the lemon curd, here's my 5 favourite hacks for the delicious cake.

1. Swap the round cake tins for 20 cupcakes. Use an ice cream scoop to portion out your mix into cupcake cases and bake for around 20 minutes and decorate with plenty of your fave buttercream.

2. You can use 200g natural yoghurt and 80g milk as a replacement for buttermilk. No yoghurt? Squeeze the juice of a lemon into 280g full fat milk and wait 5 minutes before adding to cake mix.

3. Lemon curd is the obvious filling for this cake, but have you ever tried raspberry jam? Even better, scatter a few raspberries over the cake batter before baking for a berry surprise!

4. Not in the mood for a rich buttercream? Why not make a loaf cake or bundt cake and drizzle with some icing sugar mixed with a tablespoon or two of lemon juice.

5. Make a dairy free version of the Lemon Buttermilk cake by replacing the buttermilk with 280g nut milk and the juice of 1 lemon. Use your favourite dairy free butter to make a buttercream.
